What it is

Protein stripped from a plant in a slurry plant, then rebuilt into food-shape.

Why your biology objects

Industrial isolation uses alkaline washes, acid precipitation, and hexane, and concentrates whatever the plant carried — for soy that means the isoflavones (genistein, daidzein), phytoestrogens that bind your estrogen receptors (ERβ). The plant was food; the isolate is an ingredient, eaten daily at doses no traditional soy food delivered.
