What it is

Fruit with the water gone — concentrated, including the sugar, but everything the fruit had is still in there.

Why your biology objects

The fiber, potassium, and polyphenols stay intact, so the sugar still arrives slowed and balanced — unlike juice concentrate, which throws the fiber away. The only catch is density: easy to eat far more than you would fresh, and watch for added oil and syrup riding along.
