What it is

Dark roasted pumpkin-seed oil, a protected Austrian tradition used cold as a finishing oil.

Why your biology objects

Traditional and used unheated, which helps — but it's still ~45–60% linoleic acid, squarely in seed-oil territory for peroxidation. The roast lends some antioxidants; the absolute LA still governs. A drizzle is a different thing from cooking in it.
