What it is

Aromatic pressed hazelnut oil, used as a finishing oil — profile nearly identical to olive.

Why your biology objects

~80% oleic acid, only ~10% linoleic — oxidation-stable, almost no OXLAM potential, a fruit/nut MUFA oil rather than a commodity seed oil. The reason it's yellow not green is that it's a pressed specialty oil, not a staple fat with deep ancestral use.
