What it is

A mild, slow-acting acid — the traditional setting agent for silken tofu — that occurs naturally in honey and wine.

Why your biology objects

It hydrolyses gently in water to gluconic acid, a normal product of glucose metabolism your body already makes and uses, and the same acid that's in honey. One of the few additives with ancestral paperwork: it's how silken tofu has been set for generations.
