What it is
The original domesticated wheats — einkorn the oldest, then emmer, then khorasan (Kamut) — Fertile Crescent staples that predate modern bread wheat.
Why your biology objects
A touch gentler genetically — einkorn lacks the D-genome and some of the most immunostimulatory gliadin epitopes of modern wheat — but make no mistake: they still contain gluten and gliadin (→ zonulin → gut permeability) and are not celiac-safe. Neolithic seed defenses intact; sourdough and sprouting still help.
