Boiled-down coconut-flower sap, sold hard on a "low-glycemic" claim that traces to a single study run by a coconut-export agency.
Why your biology objects
Chemically it's mostly sucrose — splits 1:1 like cane sugar and behaves almost identically; independent measures put its glycemic index near 50, not the marketed 35. The trace inulin is real but trivial at a teaspoon. Balanced 1:1, so no free-fructose problem — flagged on refinement and dose like any sucrose.
